Love of Fish- Culinary Voices for Sustainable Choices!

For the second year in a row, chefs step up to the (sustainable) plate on November 15, 2008.

Vancouver -SeaChoice, Canada’s national sustainable seafood program and the Jericho Tennis Club are proud to host the second-annual: For the Love of Fish: Culinary Voices for Sustainable Choices!

This year’s event will feature competitors from Vancouver’s finest restaurants including: C Restaurant, Provence, Blue Water Café, Kettle of Fish, Aramark Canada, Jericho Tennis Club, Currents Restaurant (Westin Bayshore), Mosaic Restaurant (Hyatt Regency), Four Seasons, and The Butler Did It Catering. Also participating are students from the Art Institute of Vancouver (Dubrulle Culinary Arts), Pacific Institute of Culinary Arts, and Vancouver Community College.

These established and inspiring chefs’ challenge will be to create original dishes using sustainable seafood ingredients. The green species on the menu inlcude:

  • BC albacore tuna,
  • Sablefish,
  • Dungeness crab,
  • Farmed mussles and oysters, and
  • Pacific sardines.

What will it take to impress our judging panel Hidekazu Tojo (Tojo’s), Karen Barnaby (The Fish House in Stanley Park), and Vancouver’s favourite food critic, Andrew Morrison?! Originality, taste profile, technique and presentation, and, last but not least, emphasis on sustainable seafood, of course.

SeaChoice has seen a tremendous increase in support over the last year, and the positive momentum that the sustainable seafood movement has gained, is invaluable for our oceans.

And, you don’t have to be in the seafood business in order to take part in the movement! As a consumer, there are also ways to get involved. Jill Lambert, author of A Good Catch , will be at the For the Love of Fish event with her new sustainable seafood cookbook. Grab one, try out a new fish recipe, support healty oceans, and discover for yourself how delicious sustainability can be!
