For the Love of Fish

SeaChoice hosts the first-annual Culinary Voices for Sustainable Choices! cooking competition.

One of the upcoming events aimed at increasing awareness of the SeaChoice program and sustainable fisheries, particularly among established and aspiring chefs, is the first-annual SeaChoice “For the Love of Fish- Culinary Voices for Sustainable Choices ” sustainable seafood cooking competition. This event is a great opportunity for industry professionals and students to display their talent and highlight the Vancouver culinary community’s efforts to go green by showcasing sustainable seafood.

The competition will be co-hosted by the Art Institute of Vancouver/Dubrulle Culinary Arts, and will take place on November 17th, 2007. Professional chefs and students will have an opportunity to create recipes using seafood from the SeaChoice “Best Choice” list. Vancouver’s top chefs Robert Clark and Karen Barnaby are among the judging panel. They will be awarding points for taste, professional technique and presentation, originality, and sustainability. In the sustainability category, those dishes featuring sustainable seafood from local waters will garner the greatest points.

This competition will be split into two tiers: student and professional. The winning student will have an opportunity to appear of City TV’s City Cooks. The winner of the professional tier will be awarded a two night’s stay at Painter’s Lodge in Campbell River. The winners of the competition will also be awarded beautiful medals provided by Ultimate Promotions. Other great prizes for this event include crystal ware from WH Puddifoot Limited, artwork from Rogest, sustainably-harvested seafood for ten from Albion Fisheries, brunch for two at the Fairmont Hotel, a gift certificate from Mountain Equipment Coop, gift certificates from Capers Community Markets, wine glasses from Liberty Wine Merchants, cook books from Barbara Jo’s Books to Cooks, a gift basket from Edible BC, and a signed copy of David Suzuki’s “Sacred Balance”. Competitors also have an opportunity to submit their recipe in a sustainable seafood recipe book.
