Sourdough Catfish Cakes

Try to buy channel catfish, which is generally farmed in the USA. Read more about catfish sustainability.

  • ½ lb catfish
  • 1 tsp. white pepper
  • 2 large shallot chopped
  • 2 Slices sourdough bread (crust removed)
  • 3 green onions chopped
  • ½ cup parmesan cheese
  • Salt to taste
  • 3 tbsp. olive oil
  • cornstarch (for coating)

Remove any bones or sinew from catfish.

Soak bread in a bowl of cold water.

Mince the catfish and put in a large mixing bowl. Add white pepper, shallots, green onions, parmesan cheese and salt and mix until well blended. Take bread out of the water and squeeze out excess water. Mix the bread with the rest of the ingredients until sticky. Form the mixture into uniform cakes no bigger than 2 inches in diameter and place on paper towel.

Heat olive oil in non-stick frying pan. Dust cakes with cornstarch and sauté on medium heat until golden brown (approx 4 min). Flip cakes carefully and brown other side. Serve at once with Aioli or favorite tartar sauce.

Makes four 2 inch cakes.
